Recipe: Biscuits and Gravy

I thought that I would start sharing a favorite recipe every now and then. I don't know why I decided to do this, since I am by no means a gourmet chef. Maybe that IS the reason I thought to share: just in case anyone else wants some fairly simple recipes because they aren't gourmet chefs either. Heaven knows that basic recipes that can be done in a reasonable amount of time are hard to come by in cook books or on the web, especially if you aren't even sure what you're looking for. And then when you find one, chances are you don't have some of the key ingredients in your house and making them would take a trip to the grocery store (or to a neighbor who is incredibly well stocked and generous). So, I guess I'll just share some of my faves that I can do simply and quickly with stuff I usually have on hand. So, without further ado, here is Brian's favorite meal:

Biscuits and Gravy

GRAVY
1/2 lb ground sausage
1/2 c. all-purpose flour
2 1/4 c. milk
1/2 tsp sage (optional)*
Salt & Pepper to taste

BISCUITS
2 c. Jiffy Baking Mix (its cheaper than bisquick)
2/3 c. Water

Preheat oven to 450 degrees. Crumble sausage into skillet and brown, do NOT drain grease. Reduce heat to medium. Add flour to sausage and mix together. Flour will clump together in grease and coat sausage. For 5 minutes, keep the mixture on medium heat and stir constantly. This is called browning the flour and will get rid of the flour taste. Add milk and heat to boil on Medium. Stir often to keep from burning.
Add salt and pepper (and opt. Sage). While you are waiting for the gravy to boil, mix baking mix and water. Spoon onto ungreased baking sheet and bake for 10-12 minutes. Makes abt. 12 biscuits. Once gravy reaches a boil, reduce heat to low and cook for 5 more minutes or until gravy is desired thickness.

Split biscuits and spoon gravy over top. Gravy is also good on mashed potatoes or chicken fried steak.

*Keep in mind that if you or anyone you are making this for is nursing, Sage will dry up their milk. So, if this is the case, try to find a sausage without sage and leave the sage out of the recipe.
